a very simple white seabass recipe

  • I rate this a second to the white seabass sex sauce which is my favorite. I got it from my buddy who got it from my old boss at work. I really don't like white seabass that much unless it's a good sashimi piece but this recipe worked out very well.


    Take your white seabass filets with skin on one side (I like the collar/ribs the best for bbq) and dry them. Sprinkle salt/pepper on the filets (I don't like pepper so I rub in lawrys salt and garlic powder with oregano flakes). Finely chop up a bunch of garlic, about a tablespoon for each 6"x6" piece of fish. Take the garlic and press it into the fish flesh slide. Put the fish on a piece of tin foil and get your grill hot but with low flames. Pour about a tablespoon of olive oil on the fish and rub it in. Cook the fish skin side down on the foil, if it's not smoking a lot then poke some holes in the foil so the oil can get to the coals. You want a shitload of smoke coming up, as the fish cooks the smoke flavoring adds to the fish. Flip the fish over to the flesh side to give it a nice brown color, it takes about 20 min to slowly cook the fish on my bbq.


    The results are fantastic, the garlic gives it a great flavor with the addition of the olive oil which makes it buttery, it reminds me of lobster a bit. Sorry no pix, I ate it all too quick.
