A good method for tailing lobster

  • I'll post up a vid I took as soon as I get the time to edit it down...but here is the basics


    you chill kill the bugs(put em in ice and sea water) to get em cold right off the bat, this is critical


    the flip them onto their back and using your right hand grasp all off the legs


    place your left hand, palm down, on what would be the bug's chin


    pull the legs away and up from the carapas(sp?)


    as the first shell breaking sound is heard, pull slighty back towards the front of the bug


    then continue pulling up and down


    at this point the legs and leg tendons can be easily removed from the tail and there is a big chunk of body meat on the top of the tail


    i was blown away....even learned a trick to get at the head meat which is "b" grade, but can be cleaned up and used in tacos or salads and such

  • That was great! That's the same yield I was getting, but his method is better because a knife is not required. On the other hand I'll bet gloves are needed for the average person. I'm wondering if it can be done that way without chilling them first. Thanks LB.
