Fish Chorrizo Sausage

  • I saw Rick Bayless on TV do something similar so I figured I would try it out.


    It came out delicious.


    * 3 pounds white meat fish, keep 1 cup of diced fish to the side
    * 1/2 cup olive oil
    * 3 cloves garlic, crushed
    * 1/2 cup flour
    * 2 tablespoons paprika
    * 1 teaspoons crushed red pepper
    * 1 teaspoons salt
    * 1/2 teaspoon coriander
    * 1/2 teaspoon cumin
    * 1/2 teaspoon ground black pepper


    Combined all ingredients into a food processor except for the cup of diced fish.


    Blend everything together and then mix in the diced fish by hand.


    Form fish paste into logs and wrap tightly in plastic wrap.


    Boil in water for 15 minutes and then remove.


    Let it cool down a little then remove from plastic and brown in a hot pan with olive oil.

    Yup the cup of fish is for texture. You could probably add shrimp, scallops, crab or some veggies too for texture.


    I have been wanting to make a fish sausage for a while and was thinking about putting it in some kind of hog or sheep casing but plastic wrap is a lot easier. It essentially is a fish cake just in a different shape.
