Waiting for prey, aren't iguanas vegetarian? Interesting creatures, although now considered a nuisance here in south Florida, a non native species.
I made an adjustment to a lobster snare recently and tested it on an iguana. Would've been more interesting with a PFI/FII freediving one
I've eated them. Its true that taste like chicken.
Not in my experience. The one I tried had a particular taste. And it didn't depend on the cooking method because being the first time I didn't use seasoning, so as to get the real taste of it. I assumed it tasted something like other reptilians maybe alligator, maybe even a frog. I didn't enjoy it. I'm sure it can be an acquired taste, but not worth the effort IMO as chicken tastes better straight out of the box.

I just seasoned it with salt and deep fried it. It was like eating KFC.
Then it's time for me to try again.
