I could talk food all day. I love to cook, and even more, eat. Sage is also great with some fish. You could use it as a mirinade with white wine, or also as a butter sauce. It brings out a very sweet flavor.
Aged balsamic on vanilla ice cream and fresh strawberries is great. Also, for you fufu drink drinkers. Strawberry and basil Martini.

Dan, roast pork with some sour orange(naranjas agrias), salt, pepper, garlic, good cumin and rosemary.
Rosemary and chicken is great too.
When you roast the peppers, tomatoes and other vegetables, they shard, but that gave a nice smoky flavo to saucesr, after you roast them, puth them inside a ziplock bag and wait few minutes, skin will separate from the pulp, when warm take out of bag and clean the skin, try not to run water over the vegetables or smoky flavor with wash out, add them to your sauces.
Curry and magoes with fish is great too.I am hungry, later.
