Grill the collars in jerk seasoning. Works best for larger models.

I've only shot one, but when I got it home and I was vacuum sealing the fillets, I sliced up a pound or so into thin strips and served it with soy sauce and wasabi..... It's really great raw when it's fresh from the ocean.
For the rest of the fish I like to smear a little olive oil on the fillets, sprinkle a little salt and fresh cracked pepper on the meat then grill it on the BBQ with the skin on. Meat side down for 2-3 minutes over direct high heat to get some nice marking (just until the meat doesn't stick to the grill anymore), then flip it and finish skin side down for another 3 minutes or so (depending on how thick it is). DON'T over cook it.
I marinated the collars in Italian Dressing (Newman's, I think) and grilled those up not too long ago, and I still have a good sized spine section (with lots of meat in between the bones) left in the freezer that I'll probably do the same way.

To be clear. The sashimi I had in NY was delicious. I just assume it's better fresher.

Sea trout are a drum and the WSB are a member of the croaker family. The WSB meat is more firm then trout but not as firm as Yellowtail.

WOW that looks delicious , so simple but soo dam good ,,,, I made a WSB head soup the other day ,it was amaizing , this mourning WSB steak and eggs
manana WSB tortas with Fresh Fallbrook Fruete Avocados ,homemade salsa Rice& Cuban beans

Ok, that was messed up. Here's my first fish of the season, had to go to the islands to get it as the coastal conditions had been dirty and crowded. I was getting to the point of being afraid of being in the water with all those loaded guns and 8'vis.
Unfortunately, as soon as we hit the island, the fuel pump went out and the boat broke down. I was sitting on the bow looking back towards the mainland while the guys were working on the engine. I happened to be watching this bird school moving around for about 1/2 hr when I realized that out there in open water was a school of wsb under them right on the surface.
I threw my top on and swam out there and shot one. Open water seabass what a trip. Fish only went 23lbs or so, but I got on the board and I love eating them that size. Made a day broken down at the island a lot better!

,Now lets see some of those monsters you, ron & captian gerorge are getting , Neptunes are on fire this year .....this year is amazing year for WSB guys are gettng them from Ensenada to Santa Cruz islands ...
