as much as i love sculpin

  • Exactly, especially jacks and mackerals. WSB is one of the few fish I cant stand raw and will only eat it cooked.

Yellowjacks are amazing raw but, I have had sasami Mackerel and it was way too oily and sticky for me. Do you have a certain method to prepare it?

  • I agree that salmon is not good for sushi/ sashimi, it is the only fish i've ever eaten raw and do not enjoy. I can't imagine mackeral sushi being good, the texture is far too mushy

Make sure it was not atlantic salmon (farm raised).

  • I've never known for sure the origins of the salmon i've had (unless i bought it myself to cook, and even then that's assuming trust in the fish monger).. but i've eaten sushi in enough different countries and states to be sure that at some point I had wild caught salmon sushi, and still didnt like it. I think it has a peculiar taste

  • I heard it was only good if it was fresh out of the water. Is there any truth to that?

No, It needs time on ice so the flesh relaxes. If I shot one in the AM I cut it up for sashimi for lunch.
I've eaten it when the filet has been on ice or lower drawer of frig up to 3 days after the take and it's still OK.

When I'm cleaning ceros, I have a bowl with soy sauce and wasabi right there.
My wife calls me "John Crow", the Belizean name for buzzard.

I also make ceviche out of mackerel. Maybe 11 years in the Philippines made me less picky about fish eating. ??

  • That's what I think too. Some don't like them though. A lot of people want fish that doesn't taste fishy. Kind of like wanting bacon that doesn't taste like pork....:D

Reminds me of a quote I believe Marco posted on here "theres only two things that smell like fish, and one of them is fish" :D:D:D

    Crazy.....

Raw salmon is my absolute favorite fish to eat raw. I could chow down on that stuff all day long and still want more.

  • yeah, like i said , to each his own.a few times i've seen this videos of people tryin to eat the fish while it's still moving .........:rolleye2: why? will it taste any better?, will it have such a huge benefit to your health ? will the parasites and worms not harm you ? i'm just saying . i don't really care what anyone eats but since i'm bored and stuff i state what i think.

The Japanese believe... and believe is the key word here.... that as the freshness of the fish increase so does the quality of the meat and the healthiness of the meal. It's a cultural thing. That is why you will see fish that are still moving being served in restaurants. It shows just how fresh the fish is, which is very important to the Japanese.
