Now you are embarrasing me...
But is true, I can cook.
It comes from y childhood, when I used to wach my old "nonna" (from Rome with Sicilian ancestors) cook. She was just great, like most old fashioned italian cooks (not "chefs"). Few fresh ingredients and so much love.
Then my curiosity made me learn other styles of cooking and nowadays, if I eat something I like, 99% sure I can prepare it as good as it is.
So monstruo, when you are ready for the grand bbq opening, I can give you some hints.
Marco, those hints would be very wellcome my friend, I am in the verge of building a bigger grill to acommodate some brazilian espadas and a roaster!

Man, that grill is not mine, it was an internet pic. When you come down we can make arrangments to make a Kosher Asado criollo my brother.

Monster............I am insanely jealous of that grill setup you have, very nice. When I buy a bigger house that will be the first thing built in the backyard.
I have been on a baja trip with Genaro and he made the Zarandeado both nights with the fish we shot that day..........absolutely amazing. I love to cook and especially grill, I have a keen eye and watched the master at work. Let me tell you, WSB makes amazing Zarandeado:toast2:

Mi casa es tu casa! Genaro is coming by August 12. See if you can make it here, we are going to have a private tournament just for the fun of it! All you guys are more than wellcome. That Genaro Zarandeado is the bomb, a bit spicy but delicious.

I don't have favorite, hermano .
Snipe( my girls love grilled snipe for breakfast covered with orange marmalade....the earthy swampy flavors marry well with the citrus), bison( less fat than chicken), waterfowl, bobcat loins , racoon/bear ( very similar to each other...if I had to eat one red meat the rest of my life, it'd be bear), feral hog ( taste like where it cam from ,East brings a taste of pine and acorns , out here it's sage and wheat grass) , fish( carp take a completely different turn when placed one the grill...I could take a gar and dip it in butter and you would swear it was lobster) and so on and so on.
Point is,hermano, a well collected species will give forth it's bounty....all the more likely when coaxed forth over mesquite .:)
