I may be reinventing the wheel here. I wanted to fry some fish fillets and didn't have anything to coat them with. There was some pancake mix so I gave it a shot. It has good adhesion, fried to a nice golden brown and tasted good. I recommend it.

look Dan, my mother in law has a very succesfull local business called Mr Fish. Those are great fish tacos. I´ll give you the original recipe, get :
pancake mix 300 gr
1/2 cold beer (seriously) Pacífico is the best
1 egg
1/2 cup of fécula de maíz ( i don´t know the name in english) Maizena
salt and pepper
mix all the stuff an dip the fillets on it. then fry them by the deep frying method ...enjoy with some tortillas, cabbage slices, guacamole and a spice mexican salsa... Enjoy -

Man i wish, it´s actually a modest one, it has just two restaurants so far. In spite of that the fish tacos are really something, you will see when you come here, the shrimp quesadillas and marlin tacos are my favorites !! Yum

Interesting...good tip. Although I would think that if the fish is fresh you can bread it in sawdust and it will still taste good.

I use pancake mix, I put in some salt, pepper and also and make it kind of watery. Then I roll the fish in panko and fry.

I was watching a show about diners and dives, real greasy spoons. anyway this one place would put the fish in a dry mix then into a bath of eggs/milk then back into the dry mix again then fry. looked good to me.

Exactly 12 ounce beer, 300 grams pankace mix, salt pepper and some garlic ... good stuff
Japanese tempura is the same, just change beer for real cold water ...enjoy ...

Try crushed plantain chips instead of flour or bread crumbs. It's just amazing!

Yeah, you should see the Cuban way of making it. A glass of rum with a dash of cola. I'm a practical man, beer takes too long and too many trips to the bathroom before you get drunk.

Few, but the property next to my house is a liquor store, their building gives me nice shade in the summer, so if things are getting happy it's a short trip to get the supplies. The down side is that sometimes I have to take care of their clients.
